Tomato and Burrata Salad
We’re bringing Italy to you this season. This tomato and burrata salad is the epitome of Italian cuisine – simple yet delicious. Creamy burrata on a bed of plump tomatoes drizzled with olive oil and tossed basil leaves; perfect as a side or a light lunch.
INGREDIENTS

750g Mixed Tomatoes – sliced

3 burrata
-
1 handful rocket Pesto
-
Tomatoes

METHOD
1. Blitz together the pesto ingredients in a mini chopper or bullet.
2. Drain the Burrata on a kitchen towel.
3. Add the tomatoes and rocket to a large platter.
4. Top with Burrata, season and drizzle with pesto dressing.
