Summer Couscous

What better way to impress your guests than this summer couscous? Tossed with olive oil, this light and fluffy dish is perfect for a light lunch or side for a family bbq.

INGREDIENTS

  • 100g couscous

  • 50g fresh peas

  • Olive oil

  • Lemon juice

  • Watercress

METHOD

1. Place 100g couscous in a large bowl.

2. Bring 150ml water to boil and quickly blanch 50g of fresh peas.

3. Set the peas aside and pour the boiling water over 100g couscous. Cover with cling film and set aside for 5 minutes.

4. Season the couscous with olive oil, lemon juice and lemon zest. Add the blanched peas and a handful of fresh watercress.
