Tomato and Basil Bruschetta

Sometimes the simple things in life are best…Hit the spot with this bruschetta recipe. The perfect pairing for a great date night appetiser.

INGREDIENTS

  • 12 slices French bread (or Italian bread, lightly toasted

  • 3 large tomatoes (chopped)

  • 1 tablespoon olive oil

  • Black olives

  • 3 tablespoons fresh basil (chopped)

  • 1/4 teaspoon sea salt (or kosher salt)

  • Fresh cracked pepper

  • Roasted peanut

METHOD

1. Heat 2 tbsp olive oil in a large skillet on medium-high heat

2. Add the garlic and saute for about 1 minute, until the garlic is just beginning to brown

3. Add the spinach to the pan, packing it down a bit if you need to with your hand. Use a couple of spatulas to lift the spinach and turn it over in the pan so that you coat more of it with the olive oil and garlic

4. Do this a couple of times. Cover the pan and cook for 1 minute. Uncover and turn the spinach over again. Cover the pan and cook for an additional minute

5. Remove from the pan and drain excess liquid: After 2 minutes of covered cooking, the spinach should be completely wilted. Remove from heat

Serving:

1. Place 2tbs of the spinach in the plate

2. Cut the figs in half and put it on top of the spinach

3. Sprinkled the choice of cheese on top

4. Finish with a drizzle of maple syrup or honey dressing
