BOURSIN, GRAPES & RED
ONION FLATBREAD

This is a super easy recipe to make and perfect for entertaining! You can use any soft cheese of your choice…honestly make it once and you’ll be making it on repeat! So delicious! And perfect with a glass of Yellow Tail Bubbles

INGREDIENTS

  • 7g active dry yeast

  • 40g + 300g bread flour

  • 2 tbsp granulated sugar

  • 160ml + 115ml warm water

  • 3 sprigs lemon thyme

  • Salt and pepper

  • Balsamic-Red Onions:

  • 1 small red onion, thinly sliced

  • 1 tbsp brown sugar

  • 1 tbsp water

  • A few sprigs of lemon thyme

  • 1/2 tbsp balsamic vinegar

  • 125g red grapes

  • 50g Boursin garlic and herb cheese or alternative of your choice

  • Sea salt

METHOD

  1. In a large bowl, whisk the yeast and sugar with 40g of the flour. Stir in 160ml of warm water and let the mix stand until for about 5 mins slightly foamy and bubbly.

  2. Add the lemon thyme, salt, pepper and the remaining 300g of flour. Add the remaining 115 ml of water gradually until combined and a dough has formed Turn out onto a well-floured surface and knead for a few minutes until smooth. Add more flour if the dough is too sticky.

  3. Transfer the dough to an oiled bowl, cover and let it rise for an hour in a warm place until doubled in size

  4. Meanwhile saute the onions in a little oil add the lemon thyme and sugar and cook for a few minutes until the sugar has dissolved and the onion are caramelised

  5. Once ready to cook, preheat your oven to 185C. Lightly flour a baking/pizza tray, stretch the dough out to form a 13’ round on the tray. Top with the caramelised onions, leaving an edge, press on the grapes and sprinkle on sea salt. Cook for 12 minutes until the grapes have softened. Crumble on the boursin cheese and bake for a further few minutes till the cheese has slightly melted

  6. Drizzle with olive oil and enjoy
